Tasting notes

Pale, bright yellow. More feminine on the nose than the Valmur, offering aromas of citrus fruits, pear and white flowers plus a soupçon of oak spice. Very silky, seamless and refined but also shows terrific intensity and floral lift. Harmonious acidity leavens the density of this wine, giving it an almost weightless impression in the mouth. Perfectly integrated and balanced from the start. The impressively long, rising finish features piquant notes of citrus peel, minerals and flowers. I'd give this fine-grained beauty a good five years in the cellar before pulling the cork.

Bright, light yellow. Discreet aromas of white peach, flowers and spices. At once elegant and penetrating; not a fleshy grand cru but very youthful and tightly wound in the early going, with a refined texture to its peach, white pepper and spice flavors. Much less expressive today than the Valmur, even a bit dry on the back end, this classy, understated wine will need time in bottle to express itself.
About the Producer
Domaine William Fèvre is arguably one of Chablis’ greatest domaines. Following Fèvre’s retirement in 1998, the estate was sold to the Henriot family. Since then, head winemaker Didier Séguier, has steered what was then an oaky style of Chablis, to one that was much more terroir driven. The resulting wines are showing amazing purity and concentration, expressing the unique personality and minerality of each vineyard. Domaine William Fèvre owns the largest array of Premier and Grands Crus vineyards in Chablis. The estate has been farmed organically since 2006 with selected parcels farmed biodynamically.
