Champagne Diebolt-Vallois is a Champagne house in the grand cru village of Cramant in the Côte des Blancs. The pinnacle of the house's portfolio is its Fleur de Passion, a Blanc de Blancs Champagne made exclusively from Chardonnay grapes picked from eight plots of Cramant vines more than 40 years old. The Diebolt-Vallois family has an extensive history of winemaking in this region dating back to the 15th Century. However, it is Jacques Diebolt who created the Champagne house as it is today, building a new winery and cellars in 1960, and increasing the vineyards to their current 11-hectare (26-acre) size. The vast majority of these vineyards are planted to Chardonnay, with a significant proportion of these situated in Cramant and the premier cru village of Cuis, as well as Chouilly and Epernay. The house also grows Pinot Noir and Pinot Meunier in Montagne de Reims and the Côte de Bar. The hillsides in Cramant are largely chalky, with east-facing exposures ideally suited to the growth of Chardonnay. In comparison, the vineyards in Cuis occupy predominantly northwest- or south-facing slopes. The wine cellars are carved into Cramant's chalky hillsides and are the home to the reserve wines, which age in vats or 40-hectoliter casks, and the newly bottled wines that age here for several years prior to being disgorged and dosed to a sweetness level between 6-8 g/L. Champagne Diebolt-Vallois regularly produces four Blanc de Blancs wines, in addition to Brut and Rosé Champagnes.
