About the Producer
In 1971, Yves Ruffin, contrary to other winemakers in his region, decided to convert his vineyards to biogrowing. He is now considered a guru for many younger generations of wine producers, and his ideas have provided us with environmentally friendly and healthy products, as well as exceptional quality. The vineyard is located in the area of Avenay Val d'Or and taxierres, covering 3 hectares, 60% of which is planted with Chardonnay and 40% with Pinot Noir. The philosophy of the company is to combine the refinement and greatness of these two vines. Vinification takes place in 12 and 30 liter oak barrels, made of old oak and acacia wood, as the winery prefers micro-oxidation rather than tannins released from the wood itself. Most of the strong wines influenced by malolactic fermentation are obtained through the solera process using wine reserves.
