Tasting notes

The 2015 Chablis Bougros Côte de Bouquerot Grand Cru has an elegant bouquet of lightly honeyed fruit infused with hints of patisserie and custard creams. The palate is medium-bodied with a crisp thread of acidity. This is one of the most taut, linear 2015s I have encountered. Green apple, spice, and a hint of ginger frame the long, satisfying finish. Excellent. Tasted blind at the annual Burgfest tasting.

Pale, green-tinged yellow. Subtle, discreet nose offers hints of citrus fruits, spices, white pepper and minerals. Then almost shockingly massive and powerful in the mouth, boasting bulletproof citrus and white peach flavors energized by harmonious acidity (but barely four grams per liter, according to Didier Séguier). More robust and masculine than the Preuses and drier and more bracing on the long finish, this sappy wine needs time to harmonize. But as with all of these 2015s, there's nothing hard about this grand cru.

Pale, bright yellow. Knockout nose combines white peach, white pepper, lime and menthol; nothing overripe about this despite the hot year and steep south-facing site. Very rich, peachy wine with noteworthy flavor purity and lovely integrated acidity. More about fruits than minerals but nonetheless sappy and precise, with a slowly building, very long finish. (A note of leesy reduction may be blocking the wine's minerality today.) This densely packed, lightly saline grand cru spreads out to coat the entire palate. The high quality of the William Fèvre 2015 grand crus is no doubt at least partly due to early harvesting.
About the Producer
Domaine William Fèvre is arguably one of Chablis’ greatest domaines. Following Fèvre’s retirement in 1998, the estate was sold to the Henriot family. Since then, head winemaker Didier Séguier, has steered what was then an oaky style of Chablis, to one that was much more terroir driven. The resulting wines are showing amazing purity and concentration, expressing the unique personality and minerality of each vineyard. Domaine William Fèvre owns the largest array of Premier and Grands Crus vineyards in Chablis. The estate has been farmed organically since 2006 with selected parcels farmed biodynamically.
