The 2021 Chablis 1er Cru Vaillons reveals a perfumed bouquet of white flowers, citrus zest, crisp orchard fruit and shells, followed by a medium to full-bodied, satiny and seamless palate that's bright and charming, with a pure, elegant profile. This has turned out beautifully.

The 2021 Chablis Vaillons 1er Cru, which comes from around 12 parcels, 3.5-hectares, two-thirds within the "Vaillons" climats in the heart of the appellation. This has a slightly yeasty nose at the moment, not a million miles away from the Montmains in style. The palate is slightly different with a little more frisson and tension, just a touch more length on the finish. This should develop nicely in bottle.
About the Producer
Domaine William Fèvre is arguably one of Chablis’ greatest domaines. Following Fèvre’s retirement in 1998, the estate was sold to the Henriot family. Since then, head winemaker Didier Séguier, has steered what was then an oaky style of Chablis, to one that was much more terroir driven. The resulting wines are showing amazing purity and concentration, expressing the unique personality and minerality of each vineyard. Domaine William Fèvre owns the largest array of Premier and Grands Crus vineyards in Chablis. The estate has been farmed organically since 2006 with selected parcels farmed biodynamically.
