About the Producer
Domaine Vincey, in the Grand Cru village of Oger, is a new winery run by a young couple, Quentin and Marine Vincey. Vincey has a total of 8 hectares of farms, most of which are located in the same village as Oger Winery. In the cellar, the grapes are pressed in traditional 4,000 kg basket presses without sulphur. After pressing and a brief settling, the must flows by gravity into the cellar. The vaulted cellars on the wine label are very cold and deep underground. The wines are naturally fermented and vinified in French oak barrels, both classic 250 liter oak barrels and 500 liter barrels. In late spring, the wine cellar can be busy. “We’re checking in and seeing where we’re going. Intervention isn’t the plan here, but it’s important to understand how each cask fits into the larger blend and the particular character of each wine,” Quentin said. Some wines go through Marlowe, some don't. Some oak casks produce floral aromas, such as la Selosse and Chartogne. This biological aging is allowed to continue to dictate how the mixture will undergo secondary fermentation over the summer. At Vincey, the wine is left on the lees for a long period of time before being processed and disgorged by hand.
