About the Producer
Domaine Thierry Laffay is a small yet high-quality estate managed by Thierry Laffay since 1985. The domaine encompasses 7 hectares of vineyards spread across seven excellent appellations. Laffay practices mostly organic farming, adhering to 'lutte raisonnée', which emphasizes reasoned cultivation. This approach avoids systematic treatments and intervenes only when necessary to address significant risks. The average age of the vines is between 40 and 50 years, and all grapes are hand-harvested. Fermentations are initiated using indigenous yeasts, and the wines are aged for a minimum of 9 months in stainless steel or enameled steel vats. After alcoholic fermentation, the wines remain on the lees and undergo malolactic fermentation the following spring. This careful handling preserves the typicity of both the terroir and the vintage. The Laffay wines are known for their taut and steely character, reflecting the classic style of Chablis reminiscent of the wines of Vincent Dauvissat, whom the producer has been visiting annually since 1995.
