Description
Hillside Select is sourced from a collection of 14 small vineyard blocks planted within an eons-old amphitheater-like structure of rock and volcanic soil that surrounds the winery. Thanks to scant soil nutrients and moisture, yields at harvest are meager and the berries are small, about the size of blueberries. This Stags Leap District site’s combination of rugged, arid soil and climate results in lush Cabernet Sauvignon fruit with dark color and intense, classic flavor.

A monumental wine in the making is the 2007 Cabernet Sauvignon Hillside Select. It represents a return to vintages such as 2002 and 2001 where this cuvee was about as compelling as any Cabernet Sauvignon made in Napa. A dense ruby/purple color is followed by sumptuous aromas of black currants, blueberries, spring flowers, and notions of oak, charcoal, and forest floor. Full-bodied with superb purity, an awesome texture, and outstanding freshness as well as precision, this stunning Cabernet Sauvignon should be accessible when released (because of the vintage character), and evolve easily for 2-3 decades. (Not yet released) Celebrating 30 years of consistent quality and both critical and commercial success, this family run winery remains one of the most admirable operations in California. The Shafers have had tremendous success with their Relentless, which was first released in 1999. A blend of 80% Syrah and 20% Petite Sirah that spends 32 months in 100% new French oak, it is a remarkably consistent offering that rarely displays much oak. The Syrah is from Napa’s cool-climate Oak Knoll sector. One of the world’s most prodigious Cabernet Sauvignons is Shafer’s 2,000-case cuvee called Hillside Select. Always 100% Cabernet Sauvignon aged in 100% new French oak for a whopping 32 months, it boasts a gorgeous track record dating back to the early nineties, and just about every recent vintage has flirted with perfection. A barrel sample of the 2007 Cabernet Sauvignon Hillside Select suggests this effort will be off the charts. A replay of the 2001 and 2002, “It’s deja vu all over again,” as a famous Yankee once said. Its opaque purple color is accompanied by an extraordinary perfume of blueberries, blackberries, black currants, charcoal, and forest floor as well a background note of sweet toasty oak. There appears to be more minerality than in other vintages as well as a freshness and vibrancy that are remarkable for a wine of such sheer concentrated essence of Cabernet Sauvignon. It should be approachable in 2-3 years, and last for 3-4 decades. It is an historic effort! (Not yet released) This family-owned winery routinely fashions exceptional wines from their Stags Leap vineyards. Deep purple-black colored, the 2007 Cabernet Sauvignon Hillside Select exudes beautiful notions of violets, dark chocolate, black olives, spice cake and cedar chest with a core of crème de cassis, blackberry pie, plum preserves and fragrant earth plus a waft of unsmoked cigars. Full-bodied, super concentrated and jam-packed with multilayered black and blue fruits, it has a rock-solid frame of grainy tannins and fantastic freshness, finishing long with tons of exotic spice and savory sparks.

One of the perfect wines from Shafer is the 2007 Shafer Cabernet Sauvignon Hillside Select. Think it over – in the first decade of the 21st century, Shafer scored three perfect scores and two 99s – that’s about as high a praise as I can give any producer in the world. Opaque purple in color, the 2007 has a stunning nose of sweet crème de cassis, black cherries, licorice, and toasty oak, a multilayered, full-throttle personality, and a texture that builds and builds. Great purity, fabulous fruit intensity and a richness without heaviness characterize this massive, prodigious effort from Shafer. It’s still very young, despite this vintage, which seems to be maturing precociously. I don’t believe this wine will hit its stride for at least another 5-10 years and drink well for at least 2-3 decades.

The 2007 Cabernet Sauvignon Hillside Select has the potential to be a perfect wine in 5 to 6 years. Although it has shut down since I tasted it last year, it is unquestionably Shafer’s finest Hillside Select since the 2001 and 2002. It needs 2-3 years of bottle age and should keep for 35+ years. This selection is made from the Eisele clone of Cabernet Sauvignon planted in a choice 50-acre parcel. It takes concentration, graciousness and complexity to its highest level in Napa Valley. An inky/blue/purple color is followed by sweet aromas of blueberries, blackberries, charcoal and subtle toast. The wine possesses fabulous concentration, a seamless/flawless personality, a textbook integration of alcohol, wood, tannin and acidity, an almost endless finish and a voluptuous texture. Exhibiting more tannin and structure than it did last year, this is a colossal wine that will still be going strong in 2050. (Not yet released) While still renowned for their portfolio of classic world-class reds, Shafer also turns out a terrific non-malolactic Chardonnay from the Red Shoulder Ranch. The only dramatic change made over recent years is that instead of 100% being barrel-fermented and oak-aged, 25% is now aged in stainless steel which has added freshness and possibly longevity. Introduced several years ago, the Cabernet Sauvignon One Point Five cuvee is aged 22 months in 100% new French oak. It is meant to be a reference point Cabernet from Stags Leap priced lower than Shafer’s limited production, usually monumental Hillside Select Cabernet Sauvignon. Shafer’s flagship offering is their monumental Cabernet Sauvignon Hillside Select (about 2,000 cases produced). Always 100% Cabernet Sauvignon aged for at least 30 months in oak, this is one of Napa’s most profound wines. Since 1999, Shafer has made a Syrah/Petite Sirah blend (usually 80% of the former and 20% of the latter) aged 32 months in 100% new French oak. The first vintage, the 1999 Relentless, which they opened at the winery to show how well it is aging, is still a baby at age 11. I rated it 96 points, which is higher than the 93 points I gave it in 2002. So much for California Syrah not aging well! (15.5% alcohol; this is the 25th anniversary edition of this bottling): Saturated bright ruby. Very deep, dark, almost liqueur-like aromas of cassis, black cherry, cocoa powder and mocha. A huge, chocolatey-ripe wine with an obvious warmth and compelling sweetness to its fine-grained cherry liqueur and dark berry flavors. Big but harmonious tannins spread out to saturate the entire palate on the very long back end. This wine is just now embarking on its plane of peak maturity and will probably remain there for quite some time. Some critics of flamboyantly ripe Napa Cabernets may find this wine a bit extreme (as is the case with numerous other 2007s) yet it manages to retain its balance--and its depth of fruit is extraordinary.

(15.5% alcohol): Deep red with ruby tones. Classic Stags Leap nose combines dark plum, black cherry, currant, mocha, dried herbs, cigar box, leafy underbrush and cocoa powder; I thought of a fresh-baked doughnut. Very densely packed and youthful but showing considerably more personality--and more consistent ripeness--than the 2006 edition. This seriously structured wine finishes with substantial but ripe tannins and excellent length. I wouldn't pull the cork for at least another few years. About the Producer
John Shafer, the founder of Shafer Vineyards, was a vice president of a Chicago publishing company when he left his 23-year career in publishing in mid-life. For 35 years, he and his son Doug have run the winery, which has earned a reputation as "one of the best wines in Napa". Today, Sifford is considered to be a full-scale winery, having expanded over the years to over 80 hectares of vineyards. Today, Sifford produces red and white wines with an annual production of 360,000 bottles. Located in the Stag's Leap AVA, the vineyards of Sifford Vineyards are situated in the southeast of Oakville in the middle of Napa Velley, with the Vaca Mountains to the east and the rolling hills and Napa Valley to the west, hence the name "Valley within a Valley". The soil of Deerleap is divided into two types, a volcanic ash layer to the east and a river alluvium layer to the west, consisting of more fertile soils with sub-clay. The vineyards are planted mainly with Chardonnay, Merlot, Cabernet Sauvignon and Syrah. The location on the hillside means that the sunshine, the oceanic fog streams in the evening and the cool nights are ideal for perfect ripening of the grapes. Standing at the foot of the hill and looking upwards, the vineyards slope downwards and, because of the steepness of the slope, the vines need to grow downwards in a desperate attempt to root, allowing the grapes to gain more nutrients and flavour. The long growing period means that the grapes ripen better, with smaller grains and lower yields, resulting in a richer flavour. In order to save energy and reduce the greenhouse effect on the atmosphere, Château Sèvres has installed solar power and does not use the electricity grid at all. In addition, the winery has been growing its grapes organically since the 1980s. The Shafer, Stag's Leap District Hillside Select is one of the top wines of the estate and one that has put it among the top wines in the world. Made from the ripest, most perfect Cabernet Sauvignon grapes, the wine is fermented and then matured for 2-3 years in new oak barrels. The wine has a concentrated fruitiness, heavy tannins and a majestic presence. Since 1990, Château Sifford's Deer Leap Mountain Selection has never scored low with the major names, with Parker rating it 100 and 99 points in 2002 and 2001 respectively, and 94-97, 95-97, 97 and 95 points in 2006, 2005, 2004 and 2003 respectively.
