The 2019 Chablis Vieilles Vignes Sélection Massale is excellent, delivering aromas of orange oil, white flowers, pear and oyster shell, followed by a medium to full-bodied, satiny and concentrated palate that's bright and chalky. It represents great value. Around a third of this cuvée matures in used barrels, the rest in tank.

The 2019 Chablis Vieilles Vignes "Sélection Massale" comes from vines over 50 years of age in the lieu-dit of Les Pargues. This has a striking, almost pungent bouquet featuring vivid scents of green apples, gooseberry and nettle and light flinty notes. I love this. The palate is very well balanced, with a fine line of acidity that counterbalances what feels like a "fat" and concentrated Chablis. There is a touch of spiciness toward the finish, completing an excellent Chablis that punches above its weight.

The Servin family has a rich history in Chablis, dating back to 1654, spanning over seven generations of winegrowers. Today, Domaine Servin stands as one of the largest owner-growers in Chablis, with 36 hectares of vineyards on the renowned hillsides of Burgundy. They produce exceptional wines, including Petit-Chablis, Chablis, Chablis 1er Cru, and Chablis Grand Cru, sourced from the finest terroirs in the Chablis commune. Domaine Servin, an esteemed estate, encompasses 38 hectares of vineyards in Chablis. Their core focus is on respecting the terroir, which guides all their practices. They strive to help the soil reach its full potential while maintaining a deep commitment to environmental preservation. François Servin, the current winemaker, adheres to traditional methods and minimizes the use of chemicals in the vineyards. He employs a significant proportion of uncloned vines through "Sélection Massale," with an average vine age of 49 years. This approach leads to extremely low yields and highly concentrated wines. Embracing an individualized approach, the Servins meticulously hand-harvest their grapes and vinify each plot separately, allowing the unique identity and authenticity of every vineyard to shine through. Their use of modern winemaking equipment ensures consistent production of high-quality wines that reflect the estate's distinctive style.
