Tasting notes

Very pale lemon color. The nose conveys the high-pitched aromas of lemon, white pepper, lavender and iodiney oyster-shell minerality that only a dog can hear. Superconcentrated, elegant and weightless on the palate, conveying penetrating flavors of citrus peel, sea salt and liquid stone. Wonderfully energetic but without any corners. A great wine in the making: utterly seamless from start to sappy, palate-staining finish. Really bulletproof fruit here: it's hard to scrape this stuff off the palate.

Pale yellow. Sexy lavender lift to the aromas of grapefruit, white pepper and crushed herbs. Tactile, broad and utterly spherical, with a strong saline character harmonizing nicely with the wine's full ripeness. Outstanding energy and length here; this wine should fill in further with bottle aging.

The 2014 Chablis Valmur Grand Cru has a not dissimilar nose to the Blanchots at the moment with limestone, citrus lemon and flint aromas are beautifully defined and focused. Every swirl of the glass and it seems to become more and more intense. The palate is fresh and tensile, just a hint of sour lemon on the entry, very good depth, but perhaps not quite achieving Blanchots' penetration and sophistication on the finish at the moment.

About the Producer

Domaine Raveneau is Chablis's finest producer. Jean Raveneau has 7 hectares of vines and produces beautifully crafted wines from three Grands Crus (Blanchot, les Clos and Valmur and four Premiers Crus (Montée de Tonnerres, les Vaillons, Butteaux and Chapelot) All the grapes are hand harvested (one of the very few remaining growers in Chablis to do so) and Jean Marie prefers to pick early rather than late, with the aim of preserving the grapes' acidities. The grapes are fermented in stainless steel vats and the wine are then aged in large oak feuilletes (the barrels have an average age of 7-8 years) for 18 months. Very low yields allied to meticulous wine making techniques are what make these wines so highly prized. They are renowned for their pure, racy minerality and rich, honeyed fruit, as well as for their ageworthiness - it would be a pity not to let them have the five to ten years in the cellar that they need to reach their sublime best.
