The 2020 Chablis Montmains 1er Cru comes from 3.8 hectares of vines over 12 parcels and offers pressed white flower scents and a touch of crushed rock. The well-defined palate features red apple mixed with subtle spicy notes that dovetail into a generous, leesy finish. Fine.

Opening in the glass with notes of citrus oil, crisp green apple, iodine and wet stones, Fèvre's 2019 Chablis 1er Cru Montmains is medium to full-bodied, layered and concentrated, with incisive acids and chalky grip on the finish. Cropped at 35 hectoliters per hectare, it's unusually deep and structured this year, and it will reward patience.

Consisting of roughly equal parts Montmains, Butteaux and Forêts (the three sous-climats of Montmains), the 2020 Chablis 1er Cru Montmains offers up aromas of crisp green apple, white flowers, bee pollen and oyster shell. Medium to full-bodied, satiny and concentrated, it's taut and precise, concluding with a saline finish.

The 2015 Chablis 1Er Cru Montmains, which comes from parcels located in Butteaux, Fôret and Montmains itself, had a pleasant reductive note on the nose that did not seem to impede the terroir expression. The palate is taut and focused, fresh right from the start with a crisp line of acidity, full of energy and tension. Dare I say, this is more like a 2014 on the finish thanks to its tension. This is certainly worth seeking out.

The 2016 Chablis 1Er Cru Montmains, which comes from ten parcels, has a clean and precise bouquet with scents of limestone, Granny Smith apples and a touch of oyster shell coming through with time. The palate is well balanced with a malic, Granny Smith apple-driven opening, a keen thread of acidity and a twist of bitter lemon on the finish. This has good potential.

The 2017 Chablis 1er Cru Montmains is showing well, offering up notes of crisp green orchard fruit, white flowers and subtle hints of oyster liquor. On the palate, the wine is medium to full-bodied, blocky and chalky, still a little shut down after its recent bottling but with the depth and energy to develop well with a few years in the cellar.

Raised in a combination of barrel and tank (whence I tasted it, post-assemblage), the Fevre 2012 Chablis Montmains Maison Fevre – from purchased fruit from Forets and (true) Montmains – delivers ripe pear and lime with prominence of their skins and pips in a display of density allied to tart brightness and crisp ripeness. This relatively austere though invigorating bottling may well gain some textural allure and depth of flavor with time in bottle, but I would, nonetheless, be inclined to plan on consuming it by 2016. Didier Seguier and his team (consult previous Wine Advocate reports on Chablis for much more about their strikingly successful methods) began picking already on September 20, 2012 and, with allowance for two days break due to rain, finished on October 2. Yields, especially in the upper classificatory echelons, were low – typically between 28 and 35 hectoliters per hectare (though in one instance a mere 18!) depending on cru. “The wines,” says Seguier – who’s obviously very bullish on them – “are consequently ripe, concentrated, and plenty rich, with natural alcohol between 12.8-13.2% and acidity as ample as that of 2010. They have the same level of minerality as the 2010s, too, but are even a little more concentrated.” While the 2011 harvest here – which began already at the end of August – broke all but 2003’s record, Seguier was at pains to point out that this is virtually where the similarities between those two vintages end, and that indeed, it was 2012, not 2011, that brought extreme heat – though then only in mid-August. Most of the Fevre 2012s did not finish malo until May, which Seguier attributes to the musts’ low pHs, a feature he points to as an index of their relatively high – hence felicitous – ratio of tartaric to malic acids. The premier crus were set to be bottled through the autumn; the grand crus in December or January. Fevre is completing the process of converting its grand crus to a biodynamic viticultural regimen and will soon commence that transition on the Left Bank. Very impressive lime with mangoes, as well as white and yellow peach aromas. This has a superb palate with smooth flesh and sleek acidity. Nectarines to close. Really exotic, attractive fresh fruits and a long, fresh palate. A great and smooth-textured Chablis! Drink or hold.

This has a very fresh and pure lemon nose with iodine, wet-chalk and spiced almond-biscuit notes. The palate has a stunning array of lemons, peaches and grapefruit with a seamless, pastry-like texture and a late, flinty twist to the succulent, grapefruit finish. Drink or hold.
