About
The Paillards also have a tradition for growing Chardonnay. This grape is intentionally placed on sites where the clay topsoil is shallow allowing the roots of the vine to find chalk quickly. A rare Blanc de Blancs, sourced from old vine Chardonnay has been crafted every year since 2007. The vineyard, « Les Mottelettes ,” was planted in 1960. In a unique expression of Bouzy terroir, the wine displays aromas of tangy citrus and exotic pineapple, passion fruit and jasmine in a subtle dance between fruit and minerality.
