The 2020 Savigny-lès-Beaune La Dominode 1er Cru is the most backward, surliest of Pavelot’s red ‘20s, black cherries and boysenberry fruit, pressed violets and incense emerging with time. The palate is medium-bodied with sappy black fruit, slightly chewy tannins but with decent weight on the finish. Just a bit "serious" at the moment. Hopefully it will lighten up in bottle.

Savigny les Beaune is less talked about than the other famous villages of Bourgogne, a few kilometres off the road, and its delicious wines are not over-hyped in terms of price. Especially since 2009, when the international market began to compete for the wines of the great Bourgogne villages, the wines of Domaine Pavelot in Savigny les Beaune have been more attractive than the best value for money. DomainePavelot is recognised by many wine critics as the cream of the crop. Now in the hands of the fourth generation, Hugues and Pierre-Yves, Hugues is in charge of the winemaking, modest, restrained, calm and stable, and only talks about the wines when he is talking about them, and is considered to be the son of the father of Château Bourgogne in recent years. The quality of the wines has been consistent over the years and the first growths, including Aux Guettes, Aux Gravains, La Dominode and Les Serpentieres, are among the best in the appellation. All the vintages, regardless of their size, showcase the terroir of the Savigny les Beaune parcels. Domaine Pavelot's wines are fruity, elegant, rich and full-bodied, with great potential for ageing. Neal Martin, who rates the wines of Bourgogne for the Wine Advocate, described Domaine Pavelot as the most delicate winemaker in Savigny-les-Beaune, and praised Jean-Marc and Hugues Pavelot as some of the most talented winemakers in the region. Pavelot has set the standard for the appellation in recent years.
