Unwinding in the glass with aromas of pear, green apple, white flowers and honey mingled with hints of oyster shell and youthful reduction, Arnaud's 2020 Chablis 1er Cru Vau De Vey is medium to full-bodied, taut and chiseled, showing just as much cut and tension as it did when I tasted it from bottle last year. Its graceful evolution confirms this new domaine's promise.
About the Producer
Jérémy Arnaud, a winemaker from the Chablis region, established his own estate in the heart of the Chablis vineyards just over 2 years ago. Despite coming from a family of winegrowers, Jérémy embarked on his own adventure by purchasing a 0.55 ha plot of vines. With his National Oenologist Diploma, Jérémy settled in the town of Beine and acquired a plot of Chablis Premier Cru and another plot of Petit Chablis. He has worked in various areas, including Chablis, Meursault, Beaune, and Pauillac, allowing him to gain insight into different types of winemaking practices. Jérémy Arnaud's main focus is to allow the vine to express itself and create wines that reflect the terroir and vintage. He is dedicated to ecological practices and minimizes the use of inputs in the vineyard. The soils are minimally worked to preserve their integrity, ecological development zones are established around the plots, and the landscape heritage of his vineyard is protected. In the cellar, Jérémy follows precise actions during the winemaking and aging processes, aiming to limit interventions to only what is strictly necessary. He avoids the use of yeasts, lactic acid bacteria inoculation, and enzymes, and keeps the doses of sulfur dioxide (SO2) to a minimum.
