About the Producer
Domaine Jean Dauvissat, founded in 1955 by Jean Dauvissat in Milly, is now run by his grandson Fabien, who took over in 2009. Under Fabien's leadership, the winery transitioned from conventional to organic farming, aiming to protect the health of vineyard workers and enhance the quality of the wine. The estate spans 22 hectares across seven communes, producing 45,000 to 60,000 bottles annually. The viticulture practices emphasize biodiversity, with no pesticides used and a focus on organic and biodynamic methods. Vinification is natural, utilizing minimal sulfur and extended lees aging to highlight the terroir's nuances, with grapes fermented separately in stainless steel tanks.
