Tasting notes

Reviewed by: David Schildknecht
Baked apple and fresh lime are mingled on the nose with faint hints of fungus. The feel is glossy, and analytically high acidity is quite thoroughly buffered. Tingling, tangy evocations of apple skin and peach fuzz lend invigoration to the finish, where a saline streak serves to activate the salivary glands. I have the slightly uneasy impression of modestly ripe fruit mingled with borderline overripe, botrytis-inflected fruit.
