About the Producer
The Mori family has owned their estate since the 18th century, with a history of grape growing and wine sales to the local cooperative dating back to the 1830s. It wasn't until the mid-1990s that Giacomo Mori renovated the vineyards and cellar, initiating estate bottling. He refurbished the family’s impressive cellar, which is carved into live tufo rock and structured across three levels to enable gravity-fed wine transfers. Giacomo selected low-yielding rootstock and the finest clones of Sangiovese and Canaiolo to revive the family’s 10-hectare vineyard. By spacing the vines tightly, he encourages deep root growth, enhancing complexity. His viticulture practices include short pruning and organic fertilization, avoiding chemical sprays in both the vineyards and winery. Today, Mori produces two exceptional Chiantis: Chianti Normale and Chianti Castelrotto. The Normale is a blend of 95% Sangiovese and 5% Canaiolo, aged in traditional large oak casks. The Castelrotto Riserva consists of 85% Sangiovese and 15% Merlot, aged in French-oak barriques. Vinification occurs in stainless-steel tanks, resulting in wines that embody the essence of Sangiovese—elegant yet concentrated. Giacomo practices organic viticulture, utilizing copper and sulfur-based products while refraining from chemical fertilizers, insecticides, and herbicides. He plants leguminous plants (Vicia Faba) between every other row, which are mowed and tilled back into the soil to provide green manure and natural nitrogen. The soil is tilled between the vines, and very low doses of SO2 are used to preserve the wines.
