About the Producer
In the village of Saint-Romain, between the verdant and rolling hills of the Hautes Côtes de Beaune in Bourgogne, Frederic Cossard founded his winery "Domaine de Chassorney" in 1996 after working in the wine industry for many years. The estate covers some 7 hectares, divided between the municipalities of Saint-Romain and Ouessé-Duresse. 2006 saw the creation of a Nègoce with Frederic and his wife, searching for the best organic and biodynamic grapes in the region, and from the Cô te de Nuits and Côte de Beaune cruises to produce a beautiful range of wines. Beaune. The estate produces a range of wines from local and neighbouring appellations, mainly from the region's predominant Pinot Noir and Chardonnay. Cossard is planted to approximately 10 hectares (25 acres) of leased vineyards, covering some of the region's biggest names. These include the Volnay and Volnay Premier Cru vineyards Les Roncerets, Les Lurets and Carelle Sous La Chapelle, and Les Pézerolles in Pommard. The local appellations of Saint-Romain and Auxey-Duresses and the Savigny-lès-Beaune appellation also produce red and white wines. In addition, red wines from the high slopes of Burgundy and basic Burgundy Pinot Noir are produced. The work of the vineyards is biodynamic and organic. No filtration or filtering agents are added to the wines produced, and no sulphur is used.
