A stylish, elegant and restrained 2000, this medium-bodied wine reveals notes of strawberry jam intermixed with black cherries, minerals, oak, and herbs. The tannin is sweet and the mid-palate firm, even beefy. This is an attractive, medium-bodied effort with impressive ripeness, length, and balance, yet it is not a blockbuster. Anticipated maturity: 2008-2020.

Performing better than it did last year, Canon's 2000 has put on additional weight, the tannin is sweeter, and the mid-palate is more expansive ... all positive signs. Long in the mouth and muted aromatically, it reveals notes of strawberry jam intermixed with black cherries, minerals, oak, and herbs. An attractive, medium-bodied effort with outstanding ripeness, length, and balance, it is not a blockbuster, but it is intense and well-delineated. Anticipated maturity: 2005-2020.

Another great modern-day Chateau Canon on par with the 2005 even though it does not quite have the intensity on the nose. Yet it has more minerality with a touch of iodine and oyster shells. This seems to have more structure and acidity than the 2005, a slight tinny element that you find in young precocious wines that should disappear with age. Very good acidity and intensity with huge grip on the masculine finish. Less sumptuous and flamboyant than the 2005, but the structure suggests this could be a longer drinking proposition. Drink 2018-2060. Tasted September 2007.

Showing potential when first tasted in November 2002 at the UGC. Then tasted blind for Wine magazine: very deep ruby colour. A complex herbal nose with notes of damp earth and blackberry leaf. A rustic feel with well-integrated tannins, superb acidity and notes of cherry liqueur, orange peel and a mass of black fruits. Sophisticated, very vigorous, simply and outstanding Canon. Tasted October 2003.

This elegant St.-Emilion has filled out nicely over the last decade. From barrel and post-bottling, I thought it might turn out austere, but that does not appear to be the case. It offers a deep ruby/purple color as well as copious aromas of black cherries, crushed rocks, and earthy undertones. While not a blockbuster, it is beautifully balanced and pure, revealing slightly more depth and richness than I expected. Drink it now and over the next 10-15 years.

A big improvement over recent efforts from this famous cru on the hillsides outside medieval St.-Emilion, Canon's 2000 is a dark ruby-colored, elegant, medium-bodied effort displaying notions of flowers, minerals, earth, black cherries, and currants. It possesses excellent concentration, purity, and balance. Moderate tannin in the finish suggests some cellaring is required. Anticipated maturity: 2005-2020.

About the Producer

Château Canon is a Premier Grand Cru Classé château in Saint-Émilion, Bordeaux. It owns pockets of vineyards close to Saint-Émilion town, with a large core parcel right on the very edge. This parcel is almost completely walled in and is traditionally hand-harvested and ploughed by horses. It is planted entirely with Merlot. This is regularly used in the Château Canon grand vin, along with a smaller proportion of Cabernet Franc from the estate's various other vineyards. More than 60 percent of Canon's vineyards are planted to Merlot. Most of the rest is Cabernet Franc, although a small portion of Cabernet Sauvignon survived the cull in the late '90s. The grapes are blended carefully to get the most from each: Merlot brings smoothness, finesse and intense fruit aromas; while Cabernet Franc brings structure and extra ability to age. The Château also makes the Croix Canon wine from an 11-hectare (27-acre) vineyard that borders the Canon estate. Buyers should be aware of the high number of wines from the Right Bank whose names include the word "Canon". This includes two distinct wines named Château Canon from Canon-Fronsac, one of which has a very similar label to this more famous wine.
