Bottled straight from the cask, without the addition of water to reduce alcohol content, our Cask Strength Series is all about combining the traditional craft of whisky making with a more modern approach to flavour exploration. The result is a deliciously intense whisky that sings with characterful flavour from the cask. The flavour Powerful sherried complexity. Spicy cloves and bonfire smoke on the nose, followed by the rich sweetness of prunes and liquorice on the palate, with a hint of subtle smoke from our Orkney heathered peat. The finish is equally spicy and rich with lingering dark dried fruit and smoked oak. The craft For this Cask Strength release, we chose first-fill, sherry-seasoned European oak casks for their aromatic spice, and add Pedro Ximénez sherry casks for their deliciously intense notes of sundried fruit to the mix. Refill casks, bourbon casks and first-fill sherry-seasoned American oak casks came next for smoothness, a touch of sweet and balance.
